How long does the kale stay fresh with the dressing on it? I pack my lunch daily, so I’m thinking this will be a delicious and healthy option for lunch.

    • Amy Johnson

The last time I made a huge batch we ate off of it for 3 days. The kale does soften a bit but it’s not mushy. Another option is to make the dressing separately then add a little dressing at a time as needed.

I made this for dinner tonight and it was delicious. So light and tasty with a nice balance of sweet and tangy. I added mandarin oranges which added to taste and presentation.

  5. JulieReply

Hi do I have to wash the kale first??
Or just chop it off and place in the bowl ?
    Thank you kindly

    • Amy Johnson

Yes, make sure the kale is clean first.

After you wash then dry as best you can, put in a big bowl, drizzle lightly with oil and a little bit of salt. Then get your clean hands in there and squeeze/massage for a few minutes. Why is my kale so tough? ›

Since kale is so fibrous, it can be difficult to cook down the leaves so that they're tender and not chewy. Some recipes have you add water or broth to the skillet while you sauté the leaves, but it's not actually necessary. Instead, after you've washed the leaves, leave them damp.

How to neutralize bitter taste? ›

The Fix: Balance bitter flavors by introducing something salty, sweet, or sour.
