This Key Lime Shortbread Cookies Recipe makes the best shortbread cookies that are not too sweet and have a hint of key lime flavor in the cookies and frosting.

Cook Time: 1 hour hour 10 minutes minutes

Total Time: 1 hour hour 25 minutes minutes

Servings: 48 cookies

Ingredients

For the Cookies:

  • 3/4 cup (170 g) butter, at room temperature
  • 1/2 cup (56 g) cornstarch
  • 1/2 cup (57 g) confectioners sugar
  • 1 1/4 cups (150 g) all-purpose flour
  • 1 teaspoon (2 g) key lime zest
  • 1 1/2 tablespoons (21 g) key lime juice

For the Frosting:

  • 3/4 cup (85 g) confectioners sugar
  • 1/4 cup (57 g) butter, at room temperature
  • 1 teaspoon (2 g) key lime zest
  • 1 tablespoon (14 g) key lime juice

Instructions

  • For the Cookies

  • Cream butter, cornstarch, and confectioners sugar until well-combined, not fluffy, about 3 minutes on medium speed with an electric mixer.

  • Add flour to the butter mixture just until well-combined.

  • Add key lime zest and juice. Beat until mixed thoroughly and soft dough is formed.

  • Divide dough into halves. Form each half into 1 inch roll.

  • Wrap in waxed paper and refrigerate at least 1 hour or until firm.

  • When ready to bake, preheat oven to 350 degrees.

  • Slice dough into 1/4 inch slices. Place on cookie sheet lined with parchment paper and bake for 10 minutes or until set. Cookies will not brown.

  • Cool completely.

  • For the Frosting

  • Cream butter and confectioners sugar. Add key lime zest and juice.

  • Beat until fluffy.

  • Spread frosting on tops of cookies.

    I didn’t follow your recipe exactly, but used it as a base. Didn’t have any confectioner’s sugar handy, so I used granulated. I also added an egg for color and flavor, and green sugar crystals rather than frosting… I gotta say, these were AMAZING. SO good. My kids snapped them up as fast as I handed them out.

    Good idea for a cookie!

  5. SO GOOD!! I used white whole wheat flour, so I can only imagine how even more delectable they are with APF. These are just SO GOOD. I am a bit crazy for citrus & lime is my favorite.

  8. What if you can’t find key limes in my part of the world? Can you substitute regular limes? Also, have you ever tried these with lemons?
